Arroz Con Leche (Mexican Rice Pudding)

To continue from our Mexican theme from last week and Cinco De Mayo. This week we have Arroz Con Leche or Mexican Rice Pudding. A very nice creamy pudding. Very easy to make and the mixture of the different milks and the dulce de leche gives it that nice depth in flavor.

Ingredients

  • 4 Cups Water
  • 1 Cup Rice
  • 2 Cinnamon Sticks
  • 3 Cups Milk
  • 1 can 12oz evaporated milk
  • 1 can 14oz sweetend condensed milk
  • 1/3 Cup Dulce De Leche
  • Ground Cinnamon

Method

Step 1

In a saucepan over medium heat, place water, rice and cinnamon stick. Bring to a boil and cook for 15 minutes or until the rice is tender.

Step 2

Once rice is tender, add in milk. Let milk boil for about 5 min before adding the rest.

Step 3

Now add in evaporated milk, condensed milk and the dulce de leche. Mix until everything is dissolved.

Step 4

Return to a slight simmer, occasionally stir and cook for an additional 10-15 minutes or until most of the liquid is absorbed and rice has a pudding-like consistency.

Step 5

Turn off the heat and let it sit to thicken. Enjoy!
