This is a recipe for Butter Cookies, It’s a very simple recipe, however i have failed at making this before already so this is actually the 2nd attempt. Initially I made it with Cashew nuts however i didn’t chop them enough and make it impossible to pipe. One other thing to keep in mind is make sure the dough is “Wet” enough so you can pipe it, you can keep adding water until it’s the right mixture. You can also either drizzle with sugar before baking or dip in chocolate after baking to add some variation.
- 1 Cup Unsalted Butter
- 1/2 Cup Granulated Sugar
- 1 Large Egg
- 1-1/2 Teaspoons Vanilla Extract
- 2-1/4 Cups All-Purpose Flour
- 1/2 Teaspoon Salt
- *Optional 1/4 cup sugar for garnish
- *Optional 1/2 cup water
Preheat oven to 350 degrees. Line two ungreased cookie sheets with parchment paper. Set aside.
In an electric mixer fitted with the paddle attachment add the butter and sugar. Cream the butter and sugar on medium speed until fluffy, about 2 minutes.
Add the egg and vanilla and beat to incorporate. Scraping down bowl and beating again to insure all ingredients are incorporated and not lumpy.
Add flour and salt and mix on low speed until incorporated. If cookie dough is too thick, add water a little bit at a time until it's slightly runny.
To pipe cookies: place a star tip in a pastry bag and pipe to desired shape, leaving about 1 inch between.
Bake the cookies at 350 degrees for 10-12 minutes or until the bottoms are golden brown.
