Caramel Cashew Blondies

It’s Caramel Day! so decided to make Caramel Cashew Blondies. The key here is making sure you have nice and roasted cashews, they give off a great smell and boost the taste. Overall a very easy recipe and tasted great.


  • 2 cups packed brown sugar
  • 3/4 cup butter, softened
  • 1 teaspoons vanilla
  • 2 eggs
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 package soft caramels, unwrapped (about 40)
  • 1/4 cup whipping cream (or milk)
  • 1 teaspoons vanilla
  • 2 cups cashews, coarsely chopped


Step 1

Heat oven to 350°F. Line 9x13-inch pan with parchment paper.

Step 2

Put cashews bare in baking pan and put in heated oven for 15 min to roast. Set aside.

Step 3

In large bowl, beat brown sugar and butter with electric mixer on medium speed until light and fluffy. Beat in 1 teaspoon of the vanilla and the eggs until well blended.

Step 4

Stir in flour, baking powder and salt until blended. Spread in pan. Bake 25 to 30 minutes or until set.

Step 5

In a large saucepan, melt caramels with whipping cream over medium-low heat, stirring frequently, until melted and smooth. Stir in 1 teaspoon vanilla and the cashews.

Step 6

Pour evenly over bars. Cool completely in pan on cooling rack, about 3 hours.
