A twist to the classic rice krispy treats, this is a Churro Krispy Treats. Essentially you are adding a bit of flavor to the marshmallow and using cinnamon toast crush instead of rice kirspies to give it that churro like taste. It’s very easy to make and make sure you use new or fresh marshmallow as it will make the whole process easier. Also be careful when you spread it over the pan to not press too hard or you will start to compress and mush all the stuff together.
- 3/4 cup unsalted butter
- 2 Tablespoon dark brown sugar
- 2 Tablespoon cinnamon
- 1 teaspoon pure vanilla extract
- 20 ounces miniature marshmallows
- 1/2 teaspoon salt
- 12 cups cinnamon toast crunch
- 3 cups graham crackers (optional)
Line 9x13 baking pan with parchment or spray with butter.
In a large pot, melt butter over medium-low heat. Continue to heat until butter melts, then foams, then turns clear golden, then starts to turn brown and smell nutty. Stir frequently, scraping up any bits from bottom as you do. As soon as butter turns brown, turn off heat, then stir in brown sugar, cinnamon and vanilla.

Add marshmallows and stir to melt. The heat of melted butter should be enough to melt marshmallows, but if necessary, turn heat on low and stir until marshmallows are smooth and no white streaks remain.
Remove pot from stove and stir in the cereal and salt.
As soon as cereal is coated, spread it quickly into prepared pan. To spread cereal to corners, grab a piece of parchment paper , then evenly press it into pan corners. Don't press too hard thought, you don't' want to compact it. Let cool 15 minutes, cut into bars and serve.
