Coffee Cake

This is a nice and simple recipe for Coffee Cake. Great to have with your morning coffee or afternoon snacks. The cake is nice and light and the crunchy topping gives it a great texture. Unlike other coffee cake recipe this one doesn’t require sour cream. Overall it’s very nice and easy to make.


  • 1-1/2 stick Butter, Softened
  • 2 cups Sugar
  • 3 cups all purpose Flour, Sifted
  • 4 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1-1/4 cup Milk
  • 3 whole Egg Whites, Beaten Until Stiff
  • 1 tablespoon Vanilla Extract
  • Topping:
  • 1-1/2 stick Butter, Softened
  • 3/4 cups Flour
  • 1-1/2 cup Brown Sugar
  • 2 Tablespoons Cinnamon
  • 1-1/2 cup Pecans, Chopped


Step 1

Preheat oven to 350 degrees. Prepare a 9 x 13 baking pan with parchment paper or grease with butter.

Step 2

In a large bowl, Sift together flour, baking powder, and salt.

Step 3

Wisk egg whites until stiff and set aside.

Step 4

In a mixing bowl, Cream butter and sugar.

Step 5

Add flour mixture and milk alternately until combined. Don't overbeat.

Step 6

Fold in beaten egg whites with a rubber spatula until incorporated. Spread in baking pan, spread so it's even.

Step 7

In a separate bowl, combine topping ingredients (I used a fork to mix until crumbly). Sprinkle all over the top.

Step 8

Bake for 40 to 45 minutes, or until cake tester comes clean. Enjoy!
