Dark Chocolate Brookies

A recipe i saw from MasterChef, so i thought i would give it a try. I ended up substituting the dark chocolate with cocoa powder. Using 3 tablespoon with 1 tablespoon of butter for every ounce of chocolate. I don’t recommend this method thought, since it’s just easier to buy some dark chocolate. Overall, it’s a very easy recipe to make and taste great with your morning coffee.


  • 350g 70% dark chocolate
  • 1/4 cup butter
  • 1 cup caster sugar
  • 2/3 cups corn starch
  • 1 tsp baking powder
  • 3 eggs
  • 1 tsp vanilla extract
  • 2/3 cups dark chocolate chips


Step 1

Preheat oven to 350F

Step 2

Place 70% chocolate and butter in a bowl and set over a saucepan of simmering water. Stir to melt and combine. Remove from heat and set aside to cool until needed.

Step 3

Combine remaining ingredients in the bowl of an electric mixer fitted with a paddle attachment and beat until light and fluffy. Add cooled chocolate butter mixture and mix until well combined

Step 4

Spoon tablespoons of mixture onto baking trays lined with baking paper. Dot the top of the cookies with the dark chocolate chips, pressing gently into the dough.

Step 5

Bake for 12-13 minutes in the preheated oven. Remove from oven and set aside to cool. Enjoy!
