This is a recipe for Devil’s Food Cupcakes. I’m going to omit the recipe i used for the icing on this because i am not happy on how they turned out. I would choose any icing recipe you prefer and just add red food coloring into it.
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 2 teaspoons baking soda
- 3⁄4 cup unsweetened cocoa powder
- 2 cups sugar
- 1 cup vegetable oil
- 1 cup hot coffee
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla
Preheat oven to 325°F. Prepare muffin tins with cupcake liners.
In a large mixing bowl, sift together dry ingredients. Add oil, coffee and milk and mix at medium speed for 2 minutes. Add eggs and vanilla and beat 2 more minutes. Expect batter to be thin.
Fill each cupcake liners with batter to fill about 3/4. Bake for about 13 minutes if you are doing mini cupcakes or 20 minutes if you are doing normal size cupcakes.
Once cooked and cake tester comes out clean, Take it out of the oven and let it sit for a few minutes in the baking tin, then transfer to wire racks to cool down.
Pipe red frosting on top of the cupcakes. Using black fondant, you can shape them as little horns and stick on each side of the cupcakes.
