Molten Chocolate Lava Cake Bites

I have made Mini Chocolate Lava Cakes before so I thought I would try a different variant of the recipe. The ingredients are fairly similar but I think this one turned out a bit easier to make. You can use a variation of chocolates if you like, for this one i used semi-sweet chocolate but you can do half semi-sweet and half dark chocolate for that extra depth. The recipe is fairly easy to make especially if you put them in ramekins and don’t have to turn them over, in my case I had to transport them and i also had to flip them over so it was a bit more hassle. Since I am using mini cupcake tins, it is very important to take them out of the tins very quickly after they have slightly cooled a bit, they keep “cooking” if you leave them in there. Also since these guys are “mini” they take very quick to cook and a difference of 30 seconds is enough to make them into a moist brownie.

Ingredients

  • 4 tbsp unsalted butter, softened
  • 1/3 cup sugar
  • 3 eggs
  • 1/3 cup all-purpose flour
  • 1/4 tsp salt
  • 8 oz. semi-sweet chocolate, melted

Method

Step 1

Preheat oven to 375c. Spray mini muffin tin with non-stick cooking spray.

Step 2

In the bowl of a mixer, cream together butter and sugar. Add eggs one at a time, beating well after each addition.

Step 3

Beat in flour and salt on low speed until just combined.

Step 4

Stir in melted chocolate.

Step 5

Spoon batter into prepared muffin tins, about 1 tablespoon of batter per cup.

Step 6

Bake for 4-6 minutes or until edges are just set and center is still soft. Cool for 4 minutes before turning out cake bites onto serving tray.

Step 7

Dust with confectioner’s sugar and serve with whipped topping or ice cream. Serve right away. Enjoy!
