Peach Cobbler Muffins

A twist to the classic Peach Cobbler. Now in a Muffin form. Its a simple fruit muffin recipe with some crumble on top which gives a nice texture and crunch to it. Easy and simple to make, makes for a nice summer treat.

Ingredients

  • 3 cups all purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1 cup of unsalted butter, melted
  • 2 eggs
  • 2 egg yolks
  • 2/3 cup milk
  • 4 tsp vanilla extract
  • 2 1/2 cups diced peaches
  • Topping:
  • 2/3 cup light brown sugar
  • 1/2 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • pinch of ground nutmeg
  • 4 tablespoon butter, melted

Method

Step 1

Preheat oven to 350 degrees F. Line muffin tin with cupcake liners

Step 2

In a medium bowl whisk together the flour, sugars, baking powder, salt, cinnamon, and nutmeg. Set aside.

Step 3

In a mixer bowl, cream together the egg, egg yolk, milk and vanilla extract. Add the cooled melted butter and mix until well incorporated.

Step 4

Mix in flour mixture and mix well. Fold in peaches by hand or manually add in peaches per muffin. Distribute 2/3 full for each muffin.

Step 5

For the crumb topping, combine all dry ingredients in a bowl. Add in melted butter and using a fork, mix it all together until you get little crumbles.

Step 6

Sprinkle crumble over each muffin. Bake muffins for 16-18 minutes, or until a skewer or toothpick comes out clean. Remove from oven and let cool in the pan on a wire rack for 20 minutes. Remove muffins from pans and Enjoy!
