Pecan Pie Brownie

A nice twist to a classic favorite, this is a Pecan Pie Brownie. I great combination of the toasted pecans with a nice depth of chocolate from the brownie making for a great combination. This is also a very easy recipe to make.

Ingredients

  • 1 cup unsalted butter
  • 2 cup + 2 Tbsp sugar
  • 1 cup + 4 Tbsp cocoa
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 Tbsp vanilla extract
  • 4 eggs
  • 1.5 cups flour
  • 2 cup chocolate chips
  • Pecan Pie Layer
  • 3/4 cup honey
  • 1/4 corn syrup
  • 1 cup brown sugar
  • 4 eggs
  • 2 Tbsp vanilla extract
  • 1/2 cup butter, melted
  • 3-4 cups chopped pecans

Method

Step 1

Preheat the oven to 350°F. Line a 9"x13" pan with parchment.

Step 2

In a double boiler over low heat, melt the butter, then add the sugar and stir to combine. Stir in the cocoa, salt, and vanilla.

Step 3

Remove from heat. Whisk in the eggs, stirring until smooth. Add the flour, baking powder and chips, again stirring until smooth.

Step 4

Bake for 15 minutes while you prepare the pecan pie layer.

Step 5

In a medium bowl, combine the corn syrup/honey and sugar. Whisk until smooth. Mix in the eggs and vanilla. Add the melted butter and stir until combined. Stir in the pecans.

Step 6

After the brownies have baked for 15 minutes, remove from oven. Pour pecan pie layer over brownies and use a spatula to spread evenly to the edges of the pan.

Step 7

Return to the oven and bake for 40-45 minutes until pecan pie topping is completely set.

Step 8

Remove from oven and allow to cool, at least 4 hours or cool in fridge for faster result.
