Rocky Road Brownies

Rocky Road Brownies is a great mix if you want to spice things up and not just make another typical brownie. The added nuts and marshmallow gives it a nice crunch and texture. Also toasting the tops brings out the flavor. It’s very easy and simple to make.

Ingredients

  • ½ cup butter
  • 4 oz unsweetened chocolate
  • 4 eggs
  • ¼ teaspoon salt
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 1 cup flour
  • 6 tablespoons unsweetened cocoa powder
  • ½ cup butter
  • 8 tablespoons evaporated milk
  • 1 teaspoon vanilla
  • 2½ cups powdered sugar
  • 3 cups walnuts, coarsely chopped
  • 3 cups mini marshmallows

Method

Step 1

Preheat oven to 350F. Grease or line a 9x13-inch baking dish with parchment paper.

Step 2

In a bowl. Add the chocolate and butter and melt in the microwave, 30 seconds at a time until melted.

Step 3

In a mixer, beat the eggs until they are light and foamy. Add the salt, sugar and vanilla to the eggs.

Step 4

Stir in the chocolate mixture, then gently fold in the flour, careful to not overmix. Pour into the prepared baking dish and bake until set, about 25 minutes. or until cake tester comes out clean.

Step 5

Pour marshmallows on top of brownie to cover most of the top layer. Pour Walnuts on top of that, also make sure to spread evenly over the whole top layer.

Step 6

Bake on a top layer in the oven for 20 minutes or until marshmallow are brown.

Step 7

In a bowl, melt together the cocoa, and butter in the microwave in 15 second bursts, stirring frequently.

Step 8

Add in the evaporated milk and vanilla. Put the powdered sugar in a bowl, then pour the chocolate mixture over it and mix to combine. Pour over brownies.
