I am making the classic Rocky Road. It’s a very easy recipe and doesn’t require any actual cooking. All you need really is a microwave to melt the chocolate. Overall it’s on the sweet side but the taste is really nice! Definitely highly recommended. In this recipe i used a combo of pecans which i toasted and graham crackers, I find the mixture of both gives it a nice mix of textures.
- 1 (12 ounce) package semisweet chocolate chips
- 1/8 cup butter
- 1 (14 ounce) can sweetened condensed milk
- 1 1/2 cups toasted pecans
- 1 1/2 cups graham crackers, broken into small pieces
- 10.5 ounce miniature marshmallows
Line a 9 x 13 inch pan with parchment paper.
Heat oven to 350F. Spread pecans on baking sheet and bake for 10 minutes. This portion is optional. You can use other kinds of nuts here if you like. Make sure to cool it down for 30 minutes before mixing with other ingredients.
in a large bowl, combine marshmallow, graham crackers and pecans. Set aside.
Melt chocolate chips and butter in a microwave safe bowl in 15 second burst on 50% power. Make sure to now overheat your chocolate. Stir occasionally until chocolate is smooth.
Pour chocolate over the marshmallow mixture. Stir to combine. Once everything is mixed together, pour mixture over the baking pan and refrigerate until the chocolate hardens. Enjoy!
