Royal Smurf S’mores

I made what i am calling, Royal Smurf S’mores. It is brown butter rice krispies treats sitting on a chocolate layered graham cracker crust topped with toasted marshmallows. It’s a fairly easy dessert to make, as with any rice krispies treats the key part i find is always use fresh marshmallow. The other factor is timing your melted chocolate with your rice krispie pour into your crust. Also i advice separating out  your cereal and marshmallow into separate bowls to make things easier while you are assembling. Overall it turned out great, and i added the blue food coloring with is optional to give it that Smurf effect.


  • 3 cups of graham cracker crumbs 3 cups of graham cracker crumbs
  • 1/2 cup sugar
  • 1 cup butter, melted
  • 7.5 cups Rice Krispies
  • 1 cup Butter
  • 1/2 cup Sugar
  • 1/4 cups Brown Sugar
  • 1/2 pound Bag Mini Marshmallows
  • 10 oz. chocolate, melted


Step 1

Preheat oven at 350 degrees F. Line 9x13 baking pan with greased foil or parchment paper.

Step 2

Place graham cracker crumbs and sugar in a bowl and toss to combine. Add in melted butter and mix to combine. Press mixture onto bottom of prepared pan. Bake at 350 degrees F for 7-10 minutes. Remove from oven and set aside.

Step 3

Prepare your marshmallow and cereal in separate large bowls so it's easier to pour in when need. Set aside.

Step 4

Combine the butter, sugar and brown sugar in a saucepan over medium heat. Bring to a gentle boil, and let it boil until the mixture begins to turn golden and caramelize. Turn the heat down to low, and add the marshmallows. Stir together until marshmallows are completely melted. Add food colouring if desired.

Step 5

While the marshmallow is melting, quickly microwave your chocolate in 30 seconds interval until melted. Set aside.

Step 6

Pour the marshmallow mixture over the Rice Krispies bowl and stir until the cereal is evenly coated.

Step 7

Spread melted chocolate over crust. Then quickly pour marshmallow mixture over top, don't press down onto the rice krispies if possible and lightly spread to cover the whole baking pan.

Step 8

Cover the whole top of the baking pan with marshmallow. Set the oven to broil, and put back the pan into the oven. Leave the door open and watch the marshmallow so it doesn't burn. Let it broil until you get a nice browning across the marh
