White Chocolate Lime Nanaimo Bars

Canada Day is coming up and what better than a great Canadian dessert. The Nanaimo Bar, it’s very simple and easy to make however this one has a twist to it. Using White Chocolate and adding Lime to the custard makes it a nice refreshing dessert.


  • Bottom Layer:
  • 1 cup unsalted butter
  • ½ cup granulated sugar
  • 10 tablespoons cocoa powder
  • 2 large egg, beaten
  • 2 cups graham cracker crumbs
  • 1 cup toasted pecans, chopped
  • 2 cup shredded coconut
  • Middle Layer:
  • 1 cup unsalted butter
  • 5 tablespoons heavy cream
  • 4 tablespoons Vanilla Custard Powder
  • 2 cups powdered sugar
  • The juice and zest of one small key lime or lime
  • Top Layer:
  • 8 ounces white chocolate
  • 4 tablespoons heavy cream


Step 1

For bottom layer: Melt unsalted butter, and sugar in top of a double boiler. Add egg and stir to cook and thicken. Remove from heat. Stir in crumbs, nuts, cocoa powder and coconut. Press firmly into an ungreased 9x13 inch pan.

Step 2

For Middle Layer: Cream butter, cream, custard powder, and icing sugar and lime juice together well. Beat until light in colour. Stir in lime zest, Spread over bottom layer. Cool for at least an hour to harden.

Step 3

For Top Layer: Melt the white chocolate and heavy cream in the microwave on 30 second burst. Pour over middle layer and chill.
